It’s no secret that I am a big fan of Rubio’s Coastal Grill. This week they are adding something to their menu that I am really excited about. I am thrilled that this July 14; Rubio’s Coastal Grill will start to offer Cauliflower Rice as a new menu option.
I love Cauliflower Rice because it a nice alternative to rice. It has numerous health benefits, has fewer calories and less carbs that a regular cup of rice. I’ve recently been back to the gym and having healthier food options is a nice pairing to my workout routines.
Despite lower calories; Rubio’s version of Cauliflower Rice will not skimp on flavors. It is made from riced cauliflower cooked with fresh cilantro, lime juice, lemongrass and sea salt. Yum! It will definitely compliment Rubio’s signature Mexican flavors. Low calories, good health benefits and delicious? I am a fan!
The Cauliflower Rice will be available as a substitute to regular rice in any of Rubio’s bowls and burritos for just $2. One can also get it as a side with any entree or kids meal. It will be available in California, Arizona and Nevada starting this July 14.
My boyfriend and I love watching Top Chef. Every Thursday night my tv is set to record the latest episode of the awesome cooking show and come the weekend we’re off watching and discussing the latest Top Chef episode. Thus it is no surprise that when I heard Top Chef finalist and alum, Richard Blais partnered with Rubio’s Coastal Grill I was super excited.
The James Beard-Nominated Cookbook Author and Restaurateur has created a new line of adventure-inspired street tacos just for Rubio’s!
His offerings include a Hawaiian-inspired Hula Hula Carnitas Taco, a Blaised & Glazed Crispy Chicken Taco and Ancho Po-Boy Shrimp Taco. From Aloha eats to classic New Orleans cuisine; these tacos are sure to be loved by many. One can even customize the tacos with their choice of tortilla; flour, corn or “Keto-style” cheese tortilla.
The tacos will be served with choice of 2 of Rubio’s delicious sides . Theywill be available starting May 20 at Rubio’s locations in California, Arizona and Nevada.

Today Rubio’s Coastal Grill in Torrance had a grand re-oepning party!
The store recently was remodeled to get a fresh new look. The new Rubio’s has a nice modern feel with light brown wood interior and bright lighting.
There’s also a nice new look for the salsa bar as well!
The menu is a mix of new and old. There are the old favorites like fish tacos, salads and enchiladas. The grilled chicken enchiladas are my favorite. I loved the big tender pieces of chicken inside. It goes well with the citrus rice.
There’s also new offerings such as their Surf and Turf combo. The Surf and Turf combo comes with Langostino lobster tacos and steak tacos. This is a nice new addition for those who want a little bit of seafood but want steak as well.
I was happy to see the return of a classic favorite, the chicken tortilla soup. It has marinated grilled chicken in chicken broth along with Rubio’s salsa fresca , Mexican rice and cheese. I loved how there was fresh avocado, crisp chili-lime strips and cheese on top. This tasty soup is perfect for chilly nights like today.
