Ingredients: fried egg, eggplant, meat filling (optional), topped with banana ketchup/tabasco (optional)
Tortang talong or Filipino eggplant is one of my favorite Filipino dishes! It is made by grilling the eggplant, removing the eggplant skin and frying it in egg. Ground beef can be added as well. This dish though is good with or without meat. It can be eaten with garlic rice and topped off with banana ketchup or tabasco.
Aside from being a very yummy dish, it has its health benefits too. Eggplant is a good source of many nutrients like fiber, magnesium and potassium :).
